Coconut Pecan Granola
Looking for a delicious, wholesome, gluten-free granola recipe that the whole family will love? This granola is everything you want in a breakfast or snack—crunchy, flavorful, naturally sweetened, and loaded with nourishing ingredients. I went through countless iterations of this recipe before landing on this. My mother in law calls this granola, "cookies" since it is SO addicting. You have been warned ;)

- 2 cups organic gluten free rolled oats I use the brand One Degree
- 1/2 cup coconut flakes
- 1/2 cup fine shredded coconut
- 3/4 cup chopped pecans
- 1/2 cup slivered almonds optional
- 1/4 cup coconut sugar
- 2 tsp cinnamon
- 1 tsp ground sea salt
- 1/4 cup coconut oil
- 1/2 cup pure maple syrup
- 1 tsp vanilla
- any other add-ins such as dried cranberries or cashews optional
Preheat the oven to 350 degrees F
In a large bowl, combine all of the dry ingredients (including the coconut sugar).
2 cups organic gluten free rolled oats, 1/2 cup coconut flakes, 1/2 cup fine shredded coconut, 3/4 cup chopped pecans, 2 tsp cinnamon, 1 tsp ground sea salt, 1/4 cup coconut sugar, 1/2 cup slivered almonds
In a small saucepan, melt the coconut oil (or melt in the microwave), then stir in the vanilla.
1/4 cup coconut oil, 1/2 cup pure maple syrup, 1 tsp vanilla
Add this wet ingredients mixture to the dry ingredients.
Next add in the maple syrup and mix/toss all of the granola mixture ingredients together until evenly coated.
Spread mixture in an even layer onto a parchment paper-lined baking tray.
Bake at 350 degrees F for 15-18 minutes until golden brown and fragrant. The time will vary depending on the heat of the oven. It takes 16 minutes in my oven.
Allow to cool completely before removing from the baking sheet and storing. The granola will crisp up as it cools!
