Greek Tzatziki Sauce

If you are someone who is trying to find more ways to get vegetables in your diet, this tzatziki sauce is going to be your new best friend. It goes great with peppers, carrots, broccoli, tomatoes, you name it. Of course it also goes great on top of pita bread or served alongside lamb burgers. However you decide to eat it, I think you're going to love it!

  • Grate the cucumber with a box grater. Then place the grated cucumber in a cheesecloth, coffee filter, or paper towel and squeeze excess moisture out.
    1/2 cup finely grated cucumber
  • Add the cucumber to a small bowl. Then add the greek yogurt and all of the rest of the ingredients.
    1 cup organic greek yogurt or dairy free coconut yogurt, 1 tbsp lemon juice, 1/2 tbsp extra virgin olive oil, 1-2 garlic cloves, 1/4 tsp sea salt, 1 tbsp chopped dill, 1 tbsp chopped mint
  • Mix it gently until it is smooth and creamy
  • Top with a drizzle of olive oil and enjoy!
