Healthy Chia Pudding with Coconut Milk

This creamy chia pudding with coconut milk is my go-to healthy chia pudding recipe! Made with just 4 simple & wholesome ingredients, it’s the perfect breakfast or healthy dessert. The lemon zest adds such a bright twist, and it tastes even better the next day. Try topping it with fresh fruit, coconut flakes or a little homemade granola.

  • In a medium bowl, whisk together the canned coconut milk, chia seeds, maple syrup, lemon zest, and pure vanilla extract. Stir well to make sure the chia seeds are evenly distributed.
  • Let the mixture sit at room temperature for 15-30 minutes so the chia seeds can plump up. Give it one final stir then cover the bowl and transfer it to the fridge for at least 4 hours or overnight for the creamiest pudding.
  • To serve, top with fresh raspberries, toasted coconut and/or fresh homemade granola
