  • Add the coconut sugar and arrowroot powder (or corn starch) to a high-speed blender or coffee grinder.
  • Blend for about 30–60 seconds, or until the coconut sugar has transformed from granules into a very fine powder. You may want to start at low speed before increasing the speed. Rub a little between your fingers.
    It should have a soft, powdery consistency rather than feeling like granulated sugar. If it's still gritty, blend again until fine. Use immediately or transfer to an airtight container for storage.

  • Use a high-speed blender: A high-powered blender or coffee grinder will give you the finest, most powdery consistency.
  • Blend longer if needed: If you can still feel granules when rubbing the sugar between your fingers, blend for another 15–30 seconds.
  • Make small batches: Smaller amounts tend to blend more evenly and make it easier to achieve a fine texture.
  • Expect a darker color: Powdered coconut sugar will naturally be tan or light brown and have a richer, caramel-like flavor than traditional powdered sugar.
  • Store it airtight: Keep it in an airtight container in a cool, dry place to help prevent moisture and clumping.
