  • 1 red onion sliced
  • 1 heirloom tomato sliced
  • 1 avocado sliced
  • crumbled feta cheese omit for dairy free
  • kalamata olives on the side

Instructions
 

Greek Burgers

  • Chop the red and green onion finely. Add the onion to a large bowl, along with the ground beef, garlic and spices. Mix well with your hands and form into patties.
    1 lb organic grass fed ground beef, 1/4 cup diced red onion, 1 stalk green onion, 1/2 tbsp organic oregano, 2 garlic cloves, 1/2 tsp sea salt, ground pepper
  • Preheat a cast iron or stainless steel skillet over medium-high heat. Once hot, add the burger patties and sear on both sides until nicely browned.
  • Reduce the heat to medium and continue cooking until the internal temperature reaches 145°F for medium or 160°F for well done.
    Alternatively, after searing, transfer the burgers to a 350°F oven to finish cooking, or cook them entirely on the grill.
  • Serve these gluten free greek burgers on top of some fresh red leaf lettuce and top with fresh tzatziki, crumbled feta cheese, red onion, tomato, and avocado. Then sprinkle some olive oil, salt and pepper over the top. And serve alongside the Oven Roasted Potatoes and some Kalamata olives

Greek Oven Roasted Potatoes

  • Preheat your oven to 425°F with the baking sheet in the oven
  • Wash and dry the potatoes, then slice them in half lengthwise so they roast evenly and get those crispy edges.
    1.5 lbs fingerling or baby potatoes
  • Place the potatoes in a large bowl and drizzle with olive oil. Then add in the sea salt, black pepper, garlic powder, dried oregano, and paprika. Toss everything together until the potatoes are evenly coated.
    2-3 tbsp extra virgin olive oil, 1 tsp garlic powder, 1 tsp dried oregano, 1 tsp paprika, 1/2 tsp sea salt, black pepper
  • Spread the potatoes out in a single layer on the hot baking sheet, cut side down for the best browning.
  • Roast for 25–30 minutes, or until the potatoes are golden brown and crispy on the outside and tender on the inside.
  • Remove from the oven and serve warm alongside your Greek burgers.
