Roasted Garlic Green Beans
These roasted garlic green beans are tossed with extra virgin olive oil, fresh garlic, salt, and pepper, then roasted until tender with lightly crisp, golden brown edges. An easy, healthy side dish made with just a handful of simple ingredients and ready in about 20 minutes.

Preheat the oven. Preheat your oven to 425°F. Line a large baking sheet with parchment paper for easy cleanup, if desired.
Prep the green beans. Wash and thoroughly dry the fresh green beans. Trim the ends of the green beans on a cutting board. If using haricots verts or French green beans, you may only need to trim the stem ends.

Season. Add the green beans to a large bowl and toss with the extra-virgin olive oil, minced fresh garlic, salt, and black pepper until evenly coated.

Arrange on the pan. Spread the seasoned beans onto a sheet pan in a single layer. Avoid overcrowding the pan so the beans roast instead of steam.
Roast. Roast for 15–20 minutes, tossing once about halfway through. The roasted beans are ready when they’re tender with slightly wrinkled skins and golden brown spots.
Serve. Taste and adjust the seasoning as needed. For even more flavor, finish with a little fresh lemon juice, lemon zest, or Parmesan cheese.
