Roasted Garlic Green Beans

These roasted garlic green beans are a weekly staple in our home. They are one of those simple side dishes that proves fresh vegetables don’t need much to taste amazing. Fresh green beans are tossed with extra virgin olive oil, plenty of fresh garlic, salt, and black pepper, then roasted in a hot oven until tender with lightly crisp, golden brown edges.

  • 1 (12-ounce) bag fresh green beans or haricots verts
  • 1½ tablespoons extra virgin olive oil
  • 3–4 large garlic cloves, finely minced
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

How to Make Roasted Garlic Green Beans in the Oven

  1. Preheat the oven. Preheat your oven to 425°F. Line a large baking sheet with parchment paper for easy cleanup, if desired.
  2. Prep the green beans. Wash and thoroughly dry the fresh green beans. Trim the ends of the green beans on a cutting board. If using haricots verts or French green beans, you may only need to trim the stem ends.
  3. Season. Add the green beans to a large bowl and toss with the extra-virgin olive oil, minced fresh garlic, salt, and black pepper until evenly coated.
  4. Arrange on the pan. Spread the seasoned beans onto a sheet pan in a single layer. Avoid overcrowding the pan so the beans roast instead of steam.
  5. Roast. Roast for 20-25 minutes, tossing once about halfway through. The roasted beans are ready when they’re tender with slightly wrinkled skins and golden brown spots.

Use avocado oil: Avocado oil can be used in place of extra virgin olive oil if that’s what you have on hand.

Add more vegetables: Brussels sprouts can also be roasted alongside the beans, although you may need to cut them into smaller pieces so their cooking time is similar.
