Gluten Free Banana Bread Recipe (Dairy Free option)

Looking for a gluten free banana bread recipe that’s as delicious as it is nourishing? This version is not only gluten free, but also dairy free, naturally sweetened, and made with wholesome ingredients that support your health—without sacrificing flavor.

Whether you’re sensitive to gluten or just looking to make healthier baking choices, this banana bread will be your new go-to. Plus, it’s so moist and tasty, no one will ever guess it’s actually good for them!

Why This Gluten Free Banana Bread Recipe is Healthier

Traditional banana bread recipes often rely on refined white flour, processed sugar, and inflammatory oils. This version takes a healthier approach with a few key swaps:

  • Gluten free and dairy free – Great for those with sensitivities or anyone looking to reduce inflammation.

  • Made with gluten free flour – A nutrient-dense alternative to refined flour.

  • Naturally sweetened – We use coconut sugar instead of white sugar for a lower-glycemic option that also contains trace minerals.

  • Healthy fats – This recipe uses coconut oil instead of inflammatory seed oils like canola or vegetable oil.

  • Optional collagen protein – Boost your intake of skin, joint, and gut-supporting protein with an optional scoop of collagen.

Ingredients in This Healthy Gluten Free Banana Bread Recipe

Here’s a breakdown of what makes each ingredient a nutritious choice:

Bananas

Overripe bananas are the star of this recipe, adding natural sweetness and moisture. They’re also a good source of:

  • Potassium
  • Magnesium
  • Vitamin B6
  • Fiber

Bob’s Red Mill Gluten Free 1 to 1 Flour

This gluten free flour is a great alternative to traditional wheat flour, especially if you’re avoiding gluten or looking for something easier to digest. It’s made from a balanced blend of gluten free grains and starches and produced in a dedicated gluten free facility. I love using it in banana bread because it bakes up soft, moist, and just like the classic version—without the heaviness of conventional flour.

Coconut Oil

Coconut oil gives this bread a soft, moist texture while providing:

  • Medium Chain Triglycerides (MCTs), which support energy and metabolism
  • Antioxidants
  • A stable fat that’s ideal for baking

Coconut Sugar

A healthier sweetener alternative, coconut sugar:

  • Is less processed than refined white sugar
  • Contains small amounts of iron, zinc, calcium, and potassium
  • Has a lower glycemic index
This recipe only uses ½ cup, making it naturally sweet without being overly sugary.

Pasture Raised Eggs

Always opt for pasture-raised eggs when possible. Compared to conventional eggs, they offer:

  • More omega-3 fatty acids
  • Higher levels of vitamin A, E, and carotenoids
  • Better overall nutrient density

Collagen Protein Powder (Optional)

Collagen supports healthy skin, joints, bones, and digestion. As we age, our natural collagen levels decline, so adding a scoop to your banana bread is an easy way to supplement.
Tip: Choose an unflavored, grass-fed collagen for best results. My favorite is from the brand Perfect Supplements.

How to Make This Gluten Free Banana Bread Recipe

Follow these easy steps to bake a perfect, healthy banana bread loaf:

Ingredients:

  • 3 ripe bananas, mashed
  • 2 pasture-raised eggs
  • 1/2 cup melted coconut oil (or butter)
  • 1 tsp vanilla extract
  • 1/4 cup maple syrup
  • 1/2 cup coconut sugar
  • 2 cups gluten free 1 to 1 flour (I prefer Bob’s Red Mill)
  • 1 scoop collagen powder (optional)
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • Optional: chocolate chips, walnuts, or pecans

Instructions:

Step 1: Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper.

Step 2: In a large mixing bowl, combine mashed bananas, melted coconut oil, eggs, maple syrup and vanilla extract. Mix well.

Step 3: Add in the gf flour, collagen powder (if using), baking soda, baking powder, salt, and coconut sugar. Stir until just combined—do not overmix.

Step 4: Fold in chocolate chips, chopped nuts, or any desired add-ins.

Step 5: Pour the batter into your prepared loaf pan. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Let cool slightly before slicing. Enjoy warm or store in an airtight container for up to 3 days!

Tips for the Best Gluten Free Banana Bread

  • Use very ripe bananas for maximum natural sweetness.
  • Let the loaf cool fully before slicing to avoid crumbling.
  • Add mix-ins like chocolate chips, walnuts or pecans to customize your bread.
  • For extra protein, serve a slice with nut butter or Greek-style coconut yogurt (dairy free).
