Gluten Free Banana Bread

Delicious and healthy gluten free banana bread!! This decadent, yet healthy banana bread is sure to please even the strictest critic. It is gluten free, refined sugar free, and can be dairy free. Yet it is bursting flavor and is so decadent and moist.

What makes this banana bread healthy?

  • This healthy banana bread is gluten free and dairy free. Both gluten and dairy are allergens that can worsen health conditions for some people and lead to inflammation in the body.
  • This banana bread is made with organic oat flour instead of refined white flour. Most traditional banana bread recipes call for refined flour and lots of processed sugar.
  • This banana bread is naturally sweetened with coconut sugar, which offers some trace nutrients that white sugar does not. And is less processed than refined white sugar. 
  • This recipe calls for a reasonable amount of coconut oil, unlike many banana bread recipes that call for inflammatory seed oils such as canola oil.

    As you can see, my homemade banana bread has plenty of redeeming qualities. You can keep them all to yourself, though. No one will be able to tell that this is healthy banana bread!

What are the ingredients in this gluten free banana bread?

Bananas: Of course, you can’t have banana bread without overly rip bananas! These give this bread all of that natural sweetness. In addition, bananas are a good source of potassium, magnesium, vitamin B6, and other important nutrients. They’re also loaded with fiber and are good for digestive health.

Oat flour: Organic oat flour is the flour I recommend using for this recipe. Oat flour is a delicious and healthy replacement for traditional refined flour. It can be made by simply blending oats into a flour. It is a great source of soluble fiber, antioxidants, and vitamins and minerals. However it is important to purchase organic oats since non-organic oats are often contaminated with glyphosate. And since this recipe is gluten free, it is important to buy “gluten free” oats since oats are often cross-contaminated with gluten.

Coconut Oil: Coconut oil has adds a richness of both texture and flavor to this bread. It is what makes this bread so moist. Coconut oil is healthy replacement for any kind of refined seed oils such as canola oil, vegetable oil, etc. Coconut oil is a rich source of Antioxidants and Medium Chain Triglycerides (MCTs). MCTs are a type of saturated fat known for its health benefits.

Coconut Sugar:  Coconut sugar adds a rich sweet flavor to this bread. As previously mentioned, coconut sugar is a healthful replacement for refined sugar when enjoyed in moderation. It is far less processed than refined sugar and contains trace nutrients. This recipe only contains 1/2 cup in the entire loaf of bread.

Pasture Raised Eggs: This recipe calls for 2 pasture raised eggs. I always recommend opting for pasture raised eggs over caged, cage free, or free range eggs. This is because pasture raised eggs are higher in healthy omega 3 fats and lower in inflammatory omega 6 fats. They also contain a significantly greater vitamin A, vitamin E, and carotenoid content compared to egg yolks from caged hens.

Collagen Protein Powder: Collagen is the most abundant protein in your body and is essential for bone health, skin health, gut health and more. However, as you age collagen begins to break down. So it is important to supplement when possible. The collagen powder in this recipe is optional, but it is a healthy add in that can help you meet your protein needs.

How to Make This Gluten Free Banana Bread

Step One: Preheat the oven to 350 degrees Fahrenheit. While the oven is preheating, line a bread loaf pan with parchment paper.

Step Two: In a mixing bowl, combine mashed bananas, melted coconut oil, eggs and vanilla extract. Stir to combine.

Step Three:  Then, add in oat flour, protein powder (if using), baking powder, salt, and sugar. Stir to combine.

Step Four: Fold in the chocolate chips (if using), and any other mix-ins such as walnuts, pecans, etc.

Step Five: Pour batter into a lined bread pan (I prefer to use a stoneware bread pan) and bake for 30-40 minutes or until a toothpick inserted comes out clean. Remove from the oven and enjoy!

Gluten Free Banana Bread

Ingredients
  

  • 3 bananas (over ripe)
  • 1/2 cup coconut oil
  • 2 pasture raised eggs
  • 1 tsp vanilla extract
  • 2 cups organic oat flour
  • 1 scoop collagen protein powder (unflavored) optional
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup coconut sugar
  • 1/4-1/2 cup chocolate chips optional
  • chopped walnuts optional

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit. Then line a bread loaf pan with parchment paper.
