Healthy Banana Bread

Healthy Banana Bread (Gluten Free/Dairy Free)

This banana bread is not only healthy but also moist and decadent. You'd never know it's gluten free, dairy free, and refined sugar free! This is the perfect baked treat for a cool winter day.

Ingredients
  

  • 3 bananas (over ripe)
  • 1/2 cup coconut oil
  • 2 pasture raised eggs
  • 1 tsp vanilla extract
  • 2 cups organic oat flour
  • 1 scoop collagen protein powder (unflavored) optional
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup coconut sugar
  • 1/4-1/2 cup chocolate chips optional
  • chopped walnuts optional

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit. Then line a bread loaf pan with parchment paper.
  • In a mixing bowl, combine mashed bananas, melted coconut oil, eggs and vanilla extract. Stir to combine.
  • Then, add in oat flour, protein powder (if using), baking powder, salt, and sugar. Stir to combine.
  • Fold in the chocolate chips.
  • Pour batter into lined bread pan and bake for 30-40 minutes or until toothpick inserted comes out clean.
  • Remove from the oven and enjoy!!
