If you don’t need the cake to be gluten free, you can sub regular all purpose flour.
Powdered Sugar
I tried making this cake with coconut sugar because i’m always trying to get away from using refined sugar in all of my recipes. However, the powdered sugar really gives the cake its tender structure. So I recommend using the brand Wholesome.
Coconut Oil or Melted Butter
Coconut oil keeps the recipe dairy-free, but melted butter adds a classic buttery flavor. Either works beautifully — just make sure it’s melted and at room temperature before adding.
Coconut Milk
Full-fat coconut milk makes the cake tender and rich. I love the brand Native Forest Organic Coconut Milk. I get the “simple” one which has no added guar gum.
Cinnamon & Vanilla

- 3 tbsp coconut oil melted (can sub butter if not dairy free)
- 1 tsp vanilla extract
- 1/2 cup Bob's Red Milll 1 to 1 Baking Flour can sub regular flour if not gluten free
- 1/2 cup powdered sugar I use the brand Wholesome
- 1/2 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 5 apples about 2 lbs
- 1/4 cup sliced almonds optional
Instructions
- Preheat your oven to 350 degrees F
- Line a 9×5 loaf pan with parchment paper (I use a stoneware loaf pan)
- In a large bowl, quickly whisk together the eggs, coconut milk, coconut oil, and vanilla until smooth.3 eggs, 2/3 cup coconut milk, 3 tbsp coconut oil, 1 tsp vanilla extract
- In a separate bowl, combine all of your dry ingredients: flour, cinnamon, baking powder, and salt.1/2 cup Bob's Red Milll 1 to 1 Baking Flour, 1/2 cup powdered sugar, 1/2 tsp cinnamon, 1 tsp baking powder, 1/4 tsp salt
- Gradually add the dry ingredients into the wet mixture, whisking until you have a smooth, creamy cake batter.
- Peel, core, and slice your apples REALLY THIN preferably with a mandoline. Add them into the bowl and mi to coat all in the batter. Transfer the apples only to the pan, gently flattening out. Pour on the remaining batter to the top of the loaf pan evenly.5 apples
- Sprinkle the sliced or flaked almonds evenly over the top of the cake batter if using them1/4 cup sliced almonds
- Transfer to the oven and bake for 50-60 minutes. Or until the top is golden brown.
- Allow to set in pan for at least 30 minutes before transferring to a wire rack to cool.
