Coconut Pecan Granola
Delicious and healthy Coconut Pecan Granola! I have gone through so many iterations of this recipe, but it lead me to this perfectly delicious granola, that our entire family is addicted to. This coconut pecan granola is not only gluten, dairy, and refined sugar free, but it is nourishing and decadent! If you are someone who loves toasted coconut, warm pecans and spices, you will love this granola.
What are the ingredients in this coconut pecan granola?
Organic Rolled Oats: Organic rolled oats are the staple ingredient in this recipe. Rolled oats are a great source of soluble fiber, antioxidants, and vitamins and minerals. However it is important to purchase organic oats since non-organic oats are often contaminated with glyphosate. And since this recipe is gluten free, it is important to buy “gluten free” oats since oats are often cross-contaminated with gluten. I prefer the brand One Degree Organics.
Coconut Oil: I use coconut oil as the fat/oil in this recipe. It adds a rich and decadent flavor. Coconut oil is also a rich source of Antioxidants and Medium Chain Triglycerides (MCTs). MCTs are a type of saturated fat known for its health benefits.
Coconut Sugar: This granola is sweetened with a mix of coconut sugar and maple syrup. I experimented with several different sweeteners and found that this was the best flavor combo. Coconut sugar is a delicious and healthy replacement for refined sugar when enjoyed in moderation. It is far less processed than refined sugar and contains trace nutrients as well.
Maple Syrup: Maple syrup adds the perfect hint of maple and sweetness to this granola. And it is a healthier choice when it comes to sweeteners. It is far less processed and is also rich in certain minerals and antioxidants. However, it does still contain a high sugar content, so it’s important to enjoy in moderation.
Pecans & Slivered Almonds: I am quite liberal with the nuts in this recipe. 😉 I love the addition of the healthy fats and micronutrients that nuts provide. And I personally love the crunch and the unique flavor profile that pecans and slivered almonds add to this granola. You can add a many or as few as you’d like.
Coconut: Shredded unsweetened coconut is another staple in this recipe. It adds so much flavor and richness to this recipe. And you can’t forget the health benefits. Coconuts are low in carbs and high in fiber and fat. They also contain beneficial minerals, powerful antioxidants, and have antibacterial effects.
Cinnamon: The cinnamon in this recipe adds that warm and comforting flavor. And helps with blood sugar balance to boot.

Coconut Pecan Granola
Ingredients
- 3 cups organic gluten free rolled oats
- 3/4 cup coconut flakes
- 3/4 cup fine shredded coconut
- 3/4 cup chopped pecans
- 1/2 cup slivered almonds
- 1 tbsp cinnamon
- 1 tsp nutmeg
- 2 tsp ground sea salt
- 1/4 cup coconut oil
- 1/4 cup honey
- 1/2 cup maple syrup
- 1 tsp vanilla
- any other add-ins such as dried cranberries or cashews optional
Instructions
- Mix all ingredients together in a large bowl
- Spread evenly on a baking sheet lined with parchment paper
- Bake at 350 degrees F for 17 mins
- Allow to cool. And then store in the freezer (or fridge) to keep it fresh and for best taste. Enjoy!
