Healthy Chia Pudding with Coconut Milk (Creamy & Easy)

  • Zest from 1 lemon (optional)
  • ½ tsp pure vanilla extract (optional)
  • Fresh raspberries, for serving

Optional toppings: coconut flakes, coconut shavings, or any of your favorite toppings like fresh fruit or granola.

How to Make Chia Pudding with Coconut Milk

  1. In a medium bowl, whisk together the canned coconut milk, chia seeds, maple syrup, lemon zest, and pure vanilla extract. Stir well to make sure the chia seeds are evenly distributed.
  2. Let the mixture sit at room temperature for 15-30 minutes so the chia seeds can plump up. Give it one final stir then cover the bowl and transfer it to the fridge for at least 4 hours or overnight for the creamiest pudding. The chia seeds will have absorbed the creamy coconut milk, creating a thick and luscious pudding texture.
  3. Serve your healthy chia pudding with fresh fruit such as raspberries, and a sprinkle of coconut shavings. Or fresh homemade granola. My homemade maple pecan granola is delicious on top!
